Dr. Castor is currently Assistant Professor and Clinical Coordinator of the Department of Nutritional Sciences at Howard University following a 15-year career as a clinical dietitian for rehabilitation and nursing home centers such Genesis and Manor Care. Dr. Castor completed her doctorate and Masters in health Education from Teachers College, Columbia. Her doctoral dissertation featured knowledge, parental influence, and cultural norms via Internet-Based Focus groups and interviews. She held faculty appointments at Prince George’s Community College, Trinity University, Bronx Community College and the University of the District of Columbia. Dr. Castor is the chairperson, architect developer and coordinator for the Interprofessional Education and Practice: Health Disparities conference for the College of Nursing and Allied Health Sciences.
Dr. Castor has co-authored several scientific publications in areas covering diabetes, heart disease and obesity prevention and cancer. Dr. Castor is currently working on addressing sleep and diabetes in women and older populations. In addition, Dr. Castor is currently part of the STAR Research fellow at Texas Center for Health Disparities, University of North Texas Health Science Center in Forth Worth TX. 2016-2017.
She lives in Columbia, Maryland with Son Joel M. Castor. She loves the Lord and seeks to serve in the way she lives. She also loves to eat, sleep, run/walk, swim, bike, photography and traveling.
